LEFTOVERS, YUM.
Today for lunch, I assembled a bunch of leftovers in our fridge to make this delicious wrap.
I used:
-1 whole-wheat tortilla
-the slaw I wrote about in my ango post
-chilled grilled chicken with a mango barbeque sauce (I’ll post the recipe later)
-and corn (originally from the freezer!)
So easy and delicious! Many flavors that all work well together.
I also ate my meal with some Sunburst cherry tomatoes. I usually hate cherry tomotoes, but these little yellow ones pop in your mouth and are great with slaw!
Ever since I went to Costa Rica (oh yeah, I went to Costa Rica over spring break… I don’t really blog anymore). I’ve been obsessed with slaw.
Here is one slaw recipe my super talented health-foodie friend came up with:
-head of cabbage, sliced into slaw
-shredded carrots
Dressing: (I don’t know the exact proportions of everything, just squeeze it all in until in covers the cabbage!)
-apple cider vinegar (or normal vinegar, red wine would probably work too)
-spicy brown mustard
-honey (less honey than mustard, probably like a 2:1 or 3:1 ratio)
Then, sprinkle on some salt, pepper, and smoked paprika.
YUM.
Also, I added some diced smoked gouda to mine when I ate it.
Delicious.
IT’S A HEALTHY, FILLING LUNCH.
Cabbage has TONS of fiber. So much, that you might want to take a beano before you go hogwild with the slaw. Hahaaa
I’ve made the mistake of eating too much slaw before……. not fun.

Today, I am literally just using anything I have in my apartment to make meals. It is finals week, so I need to use stuff up.
I threw together a dinner and it ended up being quite good!
-leeeetle bit of olive oil on a skillet
-two shallots or half an onion, whatever
-maybe like one cup of frozen corn
-half a can of pinto beans
-salt and pepper
take it off the skillet
then add:
shredded cheese (I used cheddar and monterey jack) and sunflower seeds.
That’s it! The sunflower seeds make it sooo yummy :)
Ok, so the lunch I just finished, like literally 5 minutes ago was delicious.
So try it. I attempted to get a picture, but it doesn’t look good, sorry.
I made a specialty egg sammie. Here’s whatcha do:
-make an “egg patty” by frying an egg on a skillet (just a little spray of Pam will do), add some salt and pepper
-put cheese on top and let it melt (I used cheddar/monterey jack because that’s what I had, but many other types of cheeses would also work)
-toast two small slices of seedy, cranberry bread (mine was an ancient grain loaf with dried cranberries speckled throughout, but cinnamon raisin would work as well!)
-add a bunch of lettuce
-spread on some spicy brown mustard and a little honey on top of that
MMM.
Also, I drank this delicious latte with it that I bought from Irving’s.
It was a skim milk latte with some vanilla syrup, honey, cinnamon, and nutmeg. The nutmeg was delicious.
I could totally make that latte at home. And I plan to.
Lately, I’ve been realizing how weird I am. I always knew I was, but I think people are picking up on the extent of it finally/
It’s the best way to be.
Normal=Boring
This is my tattoo right after it was ready. I made it in Soul Art Cafe and tattoo, in Sao Paulo, Brazil. The artist name is Pinho. It’s an awesome job, and there is a line around my arm connecting the beggining and the end of the phrase.
